Coconut Truffles on a dish

Ingredients

  • 1 cup cacao powder
  • 1/4 cup sunflower seed butter
  • 1 cup unsweetened shredded coconut
  • 1/4 cup finely chopped pistachio nuts
  • 1/2 cup honey
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • Zest from 1 lemon
  • 1/4 teaspoon sea salt

Directions:

  1. Combine all ingredients in a bowl and mix thoroughly.
  2. Use a spoon to portion out 24 truffles onto a plate.
  3. Cover loosely with plastic wrap and chill in the refrigerator for at least one hour.

Be mindful that 1 truffle is one serving, so share the coconut love.
